I've seen tablature for Under the Bridge which tells me that Under the Bridge is capoed in the album version (guitar 1 only). Is that the way he played it when recording and then he just played without the capo for live versions? (You can hit the same notes without a capo no problem.)

If you can easily hit the same notes without a capo, then why use the capo?;)
I've read that John is a big fan of capos several times, but I don't think he used it in the song.

Why would the sheet music write with capo instead of just writing it for an un-capoed guitar?

If you try it capoed actually, it sounds slightly different, and matches the tone of the guitar from the album. It works for me at least, but like you said it can be easily played without a capo. I would guess to say its that slight tonal difference he was looking for. Give it a try

Slightly different tone for sure. And its easier to play with a capo. Makes sense in a studio situation.

I like to play the intro with different embellishments each time in a live situation.

the chords would definately sound more "open" during the intro if a capo were used. And it's easily taken off during the Emaj7 whole note.

its with a capo...thats how the open notes (if you were using a capo) have that slight twang to them
